Wagyu( Japanese cow) meat
Genetically the highest quality meat originates from Japan, in particular from the area around Kobe. The meat is generally considered to be a delicacy renowned for its flavour, tenderness, and fatty, well-marbled texture.
The tenderness and flavour of the meat is due to its genetic predisposition to intense marbling and to producing a high percentage of oleaginous unsaturated fat due to genetic selection through the centuries and its confinement to Japan, as well as the ratio of omega 3 and omega 6.
Our bresaola is an extraordinary healthy, tasty, delicate dish. It's a new way to eat beef.
To bring you this dish we use the most advance technology, as well as continuous monitoring of the food rations and health of our wagyu cattle, we also scan (the only ones in Italy) our cows to monitor the degree of marbling before sending it to be butchered.
